Bittor Arginzoniz, from Asador Etxebarri, the second best restaurant in the world, has become an ambassador for the Salt Valley of Añana.
The Salt Valley of Añana officially kicked off the 2024 Salt Harvest with an event attended by the renowned Bittor Arginzoniz of Asador Etxebarri, recently recognised as the second best restaurant in the world.
During the ceremony, Arginzoniz was awarded the recognition that accredits him as the Ambassador of Salt from the Salt Valley of Añana. Bittor Arginzoniz, born in 1960 in Axpe, in the valley of Atxondo (Bizkaia), has taken Asador Etxebarri to the pinnacle of world gastronomy. His restaurant, located in Atxondo, has been awarded one Michelin star and three Repsol Suns, and is known for its revolutionary system of variable height grills. Arginzoniz has managed to unlock all the secrets of fire, becoming the best grill master on the planet, and his menu, which can be enjoyed by reservation, is considered an unparalleled gastronomic experience.
Arginzoniz collected the first salt of the season alongside the master salt worker, a symbolic gesture marking the beginning of the harvest in a unique landscape, surrounded by terraces with thousands of years of history. For Bittor, it was a true honour and pleasure to be the ambassador of the Salt Valley of Añana, which, in his own words, are “the most beautiful salt flats in the world.”
